The Ennis Whiskey Club have organised a series of Irish Brand tastings around Ennis again for 2025. Our November, and final event of 2025 was Pearse Lyons Whiskey, presented by, Conor Ryan.
Pearse Lyons started distilling in Carlow back in 2012. 3 years later, they relocated their stills to Dublin. By 2017, they officially opened the doors of the newly renovated St. James's Church, where their stunning distillery operates from. Conor is head of whiskey operations and has been with them from day one. He brought 6 samples to share with us. Their core range consists of the 5 year old and 7 year old blends and the 12 year old single malt. He also had two cask samples - a pot still, distilled in Dublin, and a single malt, distilled back in Carlow. We finished the tasting with Town Branch's True Cask Kentucky Straight Bourbon, from Pearse Lyons sister company, Lexington Brewing and Disilling in Kentucky.
