
Síolta Mhicil, 'the seeds of Micil' or 'Micil's Beginnings', is a cask ownership programme of 240 50L casks of 3 unique mash bills and five distinct cask types, all premium Casknolia casks from Toneleria del Sur Cooperage in Spain.
On the night of the 9th of December in 2025 club members gathered in Ennis to celebrate the bottling of our very own Síolta Mhicil cask from our friends at Micil Distillery in Salthill, Galway. We cracked open a bottle, savoured a drop together and now have our own bottles in hand to enjoy over the upcoming festive period.

Our whiskey is approximately 4 years old. It was filled in November 2021 with a peated heritage mash bill. This mashbill contains 40% peated malted barley and 35% green (unmalted) barley. The 'other grains' are 12% oats, 8% wheat and 5% rye. This is a heritage pot still style of Irish whiskey, although it cannot be classified as an Irish Pot Still Whiskey under the current technical file, which requires the 'other grains' to be less than 5% of the mash bill. We care not! This liquid was filled into a 50L American Oak, ex-bourbon barrel at 68.5% abv for its full maturation.

After its 4 years of maturation, the abv only reduced to 68.29% abv on disgorgement. With our chosen bottling abv of 52%, the yield was just 61 bottles of this truely unique expression, exclusive to the Ennis Whiskey Club.
